Tamarind juice? I like the stock idea. Only problem is it's more work...

 

 

Not Tamarind as in the juice drink. You use tamarind pulp and add hot water, mix it up, and strain off the liquid goo. A good quality chicken stock cube or ready made deli/supermarket stock is perfectly acceptable, although if you're going to do a fish based sour curry, you need a clean and simple fish stock which isn't too hard to do.
