Guest Sprigg
So I've really been loving vegetables lately and am interested in different kinds of salads that aren't lettuce based. What are your favourite salad dishes? I just made one consisting of green bell peppers, cucumber, yummy bell pepper (no joke, thats what the plant was called at the shop), red onion, lots of cilantro, and lime juice for dressing... and it's awesome. essines
Glory Bowl Salad. Sorry about the unfortunate name. My mom told me about this salad and i hate her for having said "glory bowl". the dressing is fucking sinister. 4 cups cooked brown rice 1 cup beets, grated 1 cup carrots, grated 1 cup almonds, toasted (slivered almonds) 1 cup spinach leaves 1 cup tofu, cubed Glory Bowl Dressing 1/2 cup nutritional yeast flakes 1/3 cup water 1/3 cup tamari or soy sauce 1/3 cup apple cider vinegar 2 cloves garlic, crushed 1.5 cups vegetable oil 2 tbsp tahini paste Prepare brown rice and set aside. In a skillet, sauté tofu cubes. Prepare dressing by combining all ingredients in a blender. To assemble the bowls, place cooked brown rice into bowls and top with beets, carrots, spinach, almonds and tofu. Drizzle with dressing. i don't always use tofu and i tend to use roasted sunflower seeds instead of almonds.

Root5
I really like raw beet salad. Grate a couple of raw beets. Grade a carrot. Cut up an orange. Mix it up. For dressing, mix olive oil, balsamic vinager, LOTS of fresh garlic, some fresh shallots, and some ground mustard seeds. This salad tastes better if you mix the dressing in early and really let it soak in. Let everything soak up the garlic flavour. I call it lady Macbeth salad, because after you're done grating the beets you feel like saying "out damned spot!"

modey
So I've really been loving vegetables lately and am interested in different kinds of salads that aren't lettuce based. I just made one consisting of green bell peppers, cucumber, yummy bell pepper (no joke, thats what the plant was called at the shop), red onion, lots of cilantro, and lime juice for dressing... and it's awesome. Sounds a bit like the one I make. "Crunchy Cube Salad" Here is a variation: It contains: 2-3 sticks of celery half a red capsicum (or you could use a whole one if you like) half a red onion 1 fairly hot green chilli 3 'baby qukes' (miniature cucumbers, tasty as fuck!) 3 red radishes 1 fuji apple and/or 1 pear 1-2 small (125g) cans of 'four bean mix' cut everything into cubes and use your favourite salad dressing (I just use a storebought balsamic vinegar based dressing) Another variation I've been trying lately is without apple, but with a can or two of corn kernels, a bit of tuna and a dash of kecap manis. It's fucking amazing!

OneToThirtySix
I've been mixing baby spinach, cilantro, tomato, and green onion with either sliced chicken breast and balsamic vinaigrette OR tuna with caesar for lunch for a few months now. It beats granola bars.
