As a waipipo I'm nearly in full agreement with him. Only two points I'd add is that I usually gauge the water level of the rice with the base of my middle fingernail rather than the knuckle. And I'm also surprised he didn't say anything about that girl adding pre-scrambled eggs to fried rice. I always crack in a raw egg or two into the rice and stir it as it's frying in the skillet because it's gonna get cooked anyway. Plus I pour in a bit of soy sauce at the very end.

Either way, somebody needs to instruct her properly.
