What is it with you inhabitants of the Anglosphere and your endless variety of pre-made sauces? It seems there are whole cults around different brands of sauces. Call me lame but I think home made sauces usually taste much better and you know what's in them

I really like making onion beer sauce. But only works with wheat beer because other beers are too bitter. Just brown onions in the pan with lots of butter, then make a little space in the middle of the pan and put sugar there, deglaze with dark vinegar after the sugar completely caramelised, then reduce until the vinegar is basically gone and then add the wheat beer. It's super delicious

A good squirt of HP sauce is excellent on a greasy spoon breakfast baguette. But drowning a steak in it...……..that's actually making me laugh out loud. Hahah!

Oh dear, it's like some folks are obsessed with tomato ketchup. Yeah! I drown all my food in ketchup!!! And they wear sovereign rings. You know the type.

I once witnessed the truck driver at my old firm at a Christmas works do, drown his roast turkey and roast potatoes in tomato ketchup. Wow. I actually felt a bit queasy, watching him gobble it all up like a filthy goblin. I bet he get's through litres of the stuff a month. Drinks it. Geezer Goblin.

Of course home-made sauces taste nicer but you need to remember that food in the UK tastes fucking abysmal and nobody here can cook to save their life. Why do you reckon pot noodles and other freezer food is what people survive on day to day?

Yeah, fillet can be nice on occasion, but it's less flavourful compared to a nice fatty rib-eye, so a sauce works better with it - bernaise is a bit bland too though, so I'd prefer a pepper sauce there. Nice thing about a fillet is the texture, should melt in your mouth, which is why it's very important not to overcook them; sirloins/ribeyes/etc are more forgiving there.

 

The only thing I'll use HP sauce with is sausages with a fry-up - but only on the sausages, needs to keep away from my black pudding and rashers.

I have a variety of hot sauces too, usually just eat them with fried chicken or chicken wings.

Chips are best dipped in mayo, aioli, bravas sauce or hummus; ketchup is pretty basic, but goes well with a burger.

Pah, everyone knows that you do not put sauces on a steak - if cooked properly, the steak juices are more than an adequate sauce. Adding butter or anything else is just to hide you don't know how to cook a steak properly.

I agree that you don't need a sauce and that a sauce can actually mask the delicious meat taste, but I strongly disagree about the butter part. The fats of the butter increase the taste of the steak juice by a tenfold

my peppercorn sauce recipe: after frying the steak, add a knob of butter and some finely chopped shallot and a finely chopped and mashed small clove of garlic, fry for a minute, deglaze with some brandy (light on fire for added danger),  add 1 tsp dijon mustard, fry for a minute, add 75ml single cream and a large amount of crushed peppercorns (e.g. 2 tbsp, or more, go nuts). add any juices that came from steak, add some beef stock if you have it.

 

My peppercorn sauce is very similar to yours except instead of brandy I add a bit of single malt - currently Dalmore 12.

 

A creamy peppercorn sauce does it for me.

With caramelised balsamic onions.

 

Christ I could do with a steak now.

Steak and eggs for breakfast, all dripping of my chin and then washed down with a few pints of cold beer. Caveman style. Then back to bed to sleep it off. Then dream about sucking my own dick.
