This definition reminds me of “intelligence is what intelligence tests measure”. Similar would be “poetry is arranged words”. That really sounds right to you?

yes, Its the intention behind it, other wise it would just be a sentence.

No, they both can be described as arranged words.

Agree, you experience sound through its properties in two connected domains: frequency domain and time domain. 
Music in your experience begins where those two domains end. Music is a higher level of abstraction.

I understand that but the point of definition is to define a thing differently in relation to another. So now try to find how poetry differs from sentences and you’ll find me there. ?

How about:

music = speech - text

Eat dat!

(music is a hyper polluted term, couldn't care less if it's accepted as such or not, same with art, same with poetry)

(like hey, i'm in Euro club *pumps fist* with Bach-oven, life's a success)
