    SMOKE-ROASTED PEARS


    6 large ripe pears, preferably with stems

    1/2 lemon

    1 8-ounce package cream cheese, at room temperature

    3 tablespoons brown sugar

    1 tablespoon candied ginger, chopped

    1/2 teaspoon grated lemon zest

    1/2 teaspoon ground cinnamon

    1/4 teaspoon grated nutmeg

    1/2 teaspoon ground cloves

    2 tablespoons Poire William eau de vie (Pear Brandy)

    1 teaspoon vanilla extract

    1/4 cup walnuts, toasted and coarsely chopped (optional, for serving)


    You’ll also need:


    1 lightly oiled aluminum foil pan large enough to hold the pears.

    1 cup wood chips, preferably apple, pear, cherry, or maple - soaked for 1 hour in cold water to cover, then drained.

    1 sturdy resealable plastic bag.


    Cut a thin slice off the bottom (so the pear will stand upright) and remove 1 inch from the top.

    Discard the bottom slices and set the tops aside.

    Core the pears, using a melon baller.

    Rub the cut sides with the lemon to prevent browning.

    Squeeze a few drops of juice into the cavities.


    Prepare the filling:

    In a small mixing bowl, beat the cream cheese and brown sugar until fluffy. Stir in the ginger, lemon zest, cinnamon, nutmeg, cloves, eau de vie, and vanilla extract.

    Spoon the cheese mixture to one corner of a resealable plastic bag, and snip about 1/2–inch off the corner.


    Pipe the filling into the cavities in the pears. (Alternatively, you can use a small spoon to put the filling into the pears.)

    Loosely place the pear caps on top. Arrange the pears in the lightly greased aluminum foil pan.

    The recipe can be prepared up to this stage several hours ahead.


    Set up the grill for indirect grilling and preheat to medium. If using a gas grill, place the wood chips in the smoker box or in a smoker pouch and preheat on high until you see smoke, then reduce the heat to medium.


    When ready to cook, place the pan with the pears in the center of the hot grate, away from the heat.

    If using a charcoal grill, toss the wood chips on the coals.

    Cover the grill and smoke-roast the pears until nicely browned and soft on the sides, 40 minutes to 1 hour.

    If desired, serve with vanilla or cinnamon ice cream and chopped walnuts.

  2. Oops, didn't mean to imply Syro is a "hello, and goodbye forever" album. I meant 'cuz the next release after Syro is gonna blow our minds again with some truly next-level shit, he will re-proliferate, and it'll be like he never abandoned his fans in the first place. We'll have too many new releases to hear and forget about the second Syro album for 5 years :cat:

  3. I'm just happy Richard's back! CAT023 and Syro breathe life into the community which of course is going to spark lively discussion and conflict.


    I woke up to an email from Bleep, and I already knew it would be a good day. I've always admired RDJ for his musical "mobility" - he'll strike upon something he likes, destroy it to perfection, then pick up the salvageable pieces and move on to something completely different and unexpected. He's always kept me on my toes in the past... well, except for the "dark period" before Syro of course, and now I am hearing all kinds of great sounds from some really cool pieces of hardware, crafted into tracks in a way only Richard could. After listening to it 4 times now, I really like it overall. It might not be his BEST work ever, and doesn't change my personal Top-Five releases, but I dare anyone to remix/remake any of these tracks to be better than the originals! I KINDA knew what to expect when I pitched in for CAT023, but there were some great surprises in those grooves. I think Syro will age well too, and maybe some day when we're in our sixties, we'll do another Kickstarter to unearth the elusive, mysterious post-Syro LP that never made it beyond test-pressing.


    I dig the plucky synths and warbling wet voices in s950tx16wasr10 (earth portal mix). The ending piano track should have been the Japan bonus track, 'cause MARCHROMT30A edit 2b 96 is "quite better"

  5. Absolutely fucking horrible, but some of the voices make me feel nostalgic, cause high-pitched were so overused when I grew up. They actually used to release "smurf music", which was just songs popular at that time with high-pitched vocals.

     

    Who else here is old enough to have owned a Chipmunk Punk record? I hope my copy is still in storage somewhere.

  7. I'm intrigued! Never heard of Trackermatte. I'm also a data junkie and completist, so I'd be happy to help put this stuff into Discogs and Musicbrainz.

     

    I recently put lots of missing Global Goon releases into Musicbrainz, so in case anyone here uses the Picard ID3 tagger, you can now update your Goon toonz :)
