proper anchovies

anyone like anchovies, the good ones not out of a can... fresh anchovy fillets? i think they're marinated in oil and vinegar, like boquerones from spain. we made a thread about this a while back but i cant find it, i promised someone i was going to try anchovies. i'm making an olive tapenade tonight that calls for anchovy fillets so i picked up a package of them and they look really tasty. cant wait to try them out. my recipe only requires 2 fillets, so that leaves me with another handful, so i'm not sure what to do with them... i might make a pizza of some sort tomorrow night. suggestions welcome. tonight i'm having a new friend over, a wine sommelier. loganfive will be pleased to know that he has made it his mission to convert me to old world wines. (not going to happen). anyway. yeah gonna try me some anchovies today.

Anchovies go very well with lamb, putting them in slits into a leg and roasting is an old trick, they disintregrate but the 'umami' taste is left enhancing the meat. You can get a similar effect with adding a splash of thai fish sauce to stews and sauces.

 

Whenever I have anchovies as left overs, they usually end up in a puttanesca style sauce for pasta.

 

Edit: Actually, I don't know how well bocquerones would work with lamb, but it should work. To be honest, if they're decent quality, I would scoff them as is.

Holy shit yes -- so salty and delicious! I used to love them in Caesar salad.

 

Now my favorite use is to make a salsa verde over some pasta, with capers or olives. I make mine almost like a pesto, I guess? Pulse the anchovies with some oil and fresh garlic. Throw it in to some onions and some other veggie (greens, mushrooms?) and toss that shit over some pasta w butter & pepper wooooooooo

fucking serious you guys? why do they have such a bad reputation here? (dont answer that). i think they go bad quickly and a lot of people eat bad ones or something. i bet anchovies top the list of nastiest food imaginable amongst the common american. well i have a proper anchovy boner right now. by the way, anchovy boner is the name of my dark ambient side project.

i've had some anchovies wrapped up in tinfoil in the fridge for about 3 days - will they be ok to eat? or should i blast them in a pan first?

pan/pot/grill, less food poisoning. Although the vinegar would prob. kill anything you really should eat the fish as freshly as possible.

I saw a Futurama episode all about anchovies once, it made me really want to try them. I was midway thru a pizza order until someone talked me out of it. Maybe I'll give it another shot.

puttanesca is literally the italian for 'whoreish' because of the fishy tang. italian is a wonderfully descriptive language like that.

Not the best idea, I ordered pizza with anchovies once. It was a disappointing experience to say the least!
