Pancakes

winter's hard. have some fat cakes.

 

now discuss: do you do them sweet and sickly (with maple syrup, baking them thick USA style), or do you do them hearty with cheese and ham Swiss style?

 

what's your status, i mean, what pancake would you make now?

okay Jonas, try this: get some very old gouda cheese, like the oude beemster, and put some Stroop on it...

 

Nice and thick and fluffy with bacon on top covered in syrup. not fruit or whipped cream. but bacon and syrup all up in my face. shit is intense.

salty/hearty plus sweetness is where it's at

 

also! figs! slice up some dried figs and put them in the batter.

oh god figs on my brekky. i lived in a house for a year with a massive fig tree right off the deck. you'd go on to the deck, in the sun, for a smoke, and have a fresh fucking fig snack. BEAT THAT. also had an apple and a pear tree in the huge back yard. so hard.

I like butter and syrup with whipped cream and chocolate chips. bacon on the side but it gets covered in syrup. bonus points for melting the butter in warm syrup before pouring it over the pancakes.

Pancakes are my Achilles heel, my arrow to the knee. Maybe its because I don't use Teflon or I get the wrong mix but I have never made a pancake worth a damn and the truth is that a Gypsy once brushed up against me in an elevator and I think she might have given me the pancake curse. I probably won't ever have children just in case its a genetic disorder. Videos like this make me pretty jealous.

I do like a good pancake. What I do not like is when you order them at diners and they give you three, enormous, starchy and thick yellow pancakes that make you feel sick halfway through. Silver dollar pancake with a little bit of syrup and fresh fruit (blueberries or stawberries) is the way to go.

 

Or big plate-size crepes that are airy and thin. Put some good jam on there and roll em up.

definitely got into the north american thick ones with maple syrup, butter n bacon. was serving them at my last permanent job..went down well (pretty much not sold at any establishments). but yeah, they're amazing.

 

i also love crepes and have done all my life (lemon and sugar, yeah.. what?).

holy fuck! crepes with lemon and sugar! i used to EAT MAD CREPES back in the day, was a weekly thing at my house. also had whipped cream, jam, powdered-sugar, and mostly sweet stuff back then.

I do pancakes from a mix wit some additions.

 

 

I get the "just add water" mix (either regular or wheat).

I then mix it by eye, not by the proportions specified on the boxen.

It's gotta look a little thin (just a little) in order to make em come out fluffy.

I then slice a banana in that shit and ad about a teaspoon or more of cinnamon and about a tablespoon or two of sugar.

 

I generously butter each pancake and serve hot.

 

It's true about the bacon, but that shit had better be thick cut andaple smoked or you just eatin average ass breakfast. Nowaimsayin?

 

As far as breakfast chain establishments go, Original Pancake House might be the best. If you live in America and haven't eaten at one, stop reading this shit, google that shit and bust out of whatever house-piece you livin in and GET ON THAT SHIT.

If you live outside of the USA, get on a fuckin plane, get over here and HIT THAT SHIT...HARD.

 

I come from Chicago. The best thing about that city is that there are a zillion restaurants with the word "pancake" on the title. They love some p-cakes in that part of the word.

Unfortunately, my favorite mom&pop style pancake place caught fire and burned to the ground :(

It sucks. I basically had been going there since birth.

here in austria pancakes (called palatschinken) are really thin, so you can spread jam (like apricot, typically) on 'em & roll 'em up like these motherfuckers:

you can also fill them with curd & peaches/raisins/sweet stuff, top them with sweet sauce & put them in the oven, which is the real shit & has all the kcals you'll need forever:

now if you get tired of them palatschinken, you can cut them up & make frittaten, put them in a bowl of beef broth with some freshly chopped chive & be glad you're alive & in vienna. frittatensuppe:
