Also; make the batter mix atleast half an hour before and sit in the fridge, because the starch has had more time to absorb the liquid, and air bubbles to disperse.... I've broken it slightly and go for a savoury main and a lemon and sugar for desert [well probably eat 10 in all] Spinach + a cheese is nice. Or spinach + a cheese + fried mushrooms. Bacon and maple syrup. Lemon and sugar. Will go for a chocolate and ice cream crepe if I'm on da continent but not on shrove Tuesday in the UK. i don't really like pancakes But if I did: Gotta have some cheddar on a marmite pancake tbh. Poor lad is on infant gaviscon 4 times a day to supplement his feeds. Otherwise, I would be all over muscavado sugar and freshly squeezed lime juice. Pro-tip:- Once had tequila pancakes at a house party. Tequila Gold, Salt and Lime.
